This recipe comes from an old newspaper clipping. I wrote on it: "wonderful! first made 12/12/01." Now, almost seven years later, my original impression holds. These are simply fantastic. Perfect for when you want something really chocolatey. I used the Ghiradelli 60% cacao bittersweet chocolate chips.
Double Chocolate Mud Bars
1/2 cup soft butter
3/4 cup sugar
1 teaspoon vanilla
1 cup plus 2 Tablespoons flour
1/2 teaspoon baking soda
12 ounce package chocolate chips
1/2 cup chopped walnuts
Preheat oven to 350º F.
Spray 7 x 11 pan with cooking spray.
In the mixer, beat together butter and sugar.
Add egg and vanilla.
Combine flour and baking soda, and slowly add it to butter mixture.
Add 1 1/3 cups chocolate chips and the walnuts.
Put mixture in pan and bake about 25 minutes.
Take pan out of the oven and immediately sprinkle the rest of the chocolate chips on top.
When they start to melt, spread evenly.
Cool to set chocolate and cut into squares.
