Cookie Tuesday - Cinnamon Sugar Cookies
Cinnamon Sugar Cookies
Mix together:
1 cup softened butter
1/2 cup sugar
1 egg
2 teaspoons vanilla
In a separate bowl, mix:
2 cups flour
1/4 teaspoon baking soda
1/4 teaspoon salt
Add dry mixture to butter mixture.
In a small bowl, mix together 1/4 cup sugar and 1/2 teaspoon cinnamon.
Shape rounded teaspoons of dough into 1-inch balls. Roll balls in sugar/cinnamon mixture.
If desired, press 1 pecan half on top of each ball.
Place on greased cookie sheet and bake in preheated 375ºF. oven for about 10 minutes until edges are lightly browned.
These were very tasty, and a perfect rainy day cookie.

This is very similar to a recipe I have for Snickerdoodles, which my kids used to love when they were small. Yum!
