I'll admit it. Potatoes are my favorite food. I love them baked, scalloped, French fried, mashed. I cook with them frequently enough that I buy 50 pounds of organically grown potatoes at a time.
Yes, what would the world be without potatoes?! Growing up we always had two huge gardens of potatoes lovingly tended by my grandfather. The harvest filled the root cellar and lasted the entire winter.
I can never decide whether my favorite is a mound of fuffy mashed or a hot from the oven, crisp skinned baked.

Oh, yes, potatoes are wonderful! One of the reasons I was never successful with those Atkins-type diets. ;-)
