Yes, what would the world be without potatoes?! Growing up we always had two huge gardens of potatoes lovingly tended by my grandfather. The harvest filled the root cellar and lasted the entire winter. I can never decide whether my favorite is a mound of fuffy mashed or a hot from the oven, crisp skinned baked.Are you familiar with the poem Digging by Seamus Heaney? Oh, yes, potatoes are wonderful! One of the reasons I was never successful with those Atkins-type diets. ;-)I had colcannon for the first time last night, delicious!
