Healthy Pancakes (Amy's)
mix together:
1/2 cup cornmeal
1/2 cup white flour
1/2 cup whole wheat flour
2 T. sugar
1/2 t. salt
1/2 t. baking powder
3/4 t. baking soda
beat lightly together and then stir into dry mixture:
1 egg
2 c. buttermilk
2 T. melted butter
I added some blueberries and raspberries.
Cook on a greased griddle.
These were great, and I won't wait another 25 years to make them! The recipe makes a lot of pancakes, plenty for Tom and I with enough batter left over for Matthew and Margaret to make pancakes for Hazel Nina.
You may go visit here to see what else is cooking this weekend.
I like that touch of cornmeal and, of course, the fruit. I'll have to give these a try.
ReplyDeleteThey are delish!
DeleteThese look delicious. Come stop by to see more pancakes.
ReplyDeleteI will!
DeleteI'm intrigued by these pancakes! The cornmeal must make for a fantastic texture. I'm definitely giving these a try!
ReplyDeleteI'm pretty sure you will like them!
DeleteI haven't had pancakes in years! I do remember my mother making them. Cheers from Carole's Chatter!
ReplyDeleteI can't imagine! Do you not like them?
DeleteMmmmm! I love pancakes. I have a recipe that I like using oatmeal and buttermilk, but no cornmeal. Will have to try this recipe sometime.
ReplyDeleteI'm not sure if I have used oats in a batter. I'll look into that idea! There are other cornmeal pancakes under the 'recipes' tab at the top of the page.
DeleteI have never made pancakes from scratch. Yours look yummy!
ReplyDeleteThey are very easy and so delicious!
DeleteLook and sound good, Nan - and a bit of a reminder of a few recipes of my own that have been sitting for 20+ years.
ReplyDeleteI think it will be fun to see if I like them, or not!
DeleteLike Jama, I have a recipe that calls for oats and buttermilk. Best. Pancakes. Ever. Although, my husband disagrees. He prefers regular buttermilk pancakes with flour. I like mine the next day, cold, with peanut butter. :)
ReplyDeleteI can't imagine. Makes me shiver. :<)
DeleteYum! I am sure I'd love these, but would have to buy nearly everything - my larder and fridge are never stocked with so much choice :-)
ReplyDeleteThat is so interesting. This is all just regular stuff for me.
Deletethey look so good
ReplyDeletebut way too many for one :)
Yeah, it does make a lot.
DeleteSo nice to hear from you at Dolce Bellezza yesterday! I miss you, and don't get around as I ought any more. I mean, in blog land. At any rate, your pancakes looks delicious (and, the dog in your header made me call my husband for a view. He reminds me of our newest acquisiton: Humphrey, a lab with so much energy!). We've been enjoying gingerbread pancakes this fall, but I would like to try yours. Right now.
ReplyDeleteOur Lucy also has "so much energy."
DeleteThese look very scrummy! I can see I shall have to revisit your recipes with the girls this weekend ..they had such yummy fun with them when they were small ...Now the oldest is 14 and taller than I am.... doesn't time fly
ReplyDeleteThat is unbelievable to me, Val.
