You can see these are not called "anniversary brownies". I call them that because today I made them for Margaret and Matthew for a belated anniversary of the date they got together, and the date they got engaged. I have probably noted over the years that they had known each other practically their whole lives though not in a romantic way. But one evening they re-met at a party, and the rest, so they say, is history. Matt wanted to give her a ring on the date they met, but Margaret had to work so he asked her the next day.
I made a recipe out of a book I've used before here. I put in softened butter and 1 teaspoon vanilla and no nuts.
The brownies tasted very delicious, but looked quite a mess!
I have a feeling about what the problem is. I've recently been reading about how baking pans aren't all the same sizes. A 7x11 or a 9x13 may not be exactly those dimensions. I have had a few problems since I bought these stainless steel pans after the "glass breaking episode". I need to measure all the ones I have and see about getting new ones if they aren't right.
Let me start by saying I love the blog header with the chicken and your granddaughter. I think it's a brillant idea to change out your header and I for one look forward to seeing the different photos in your life.

Thanks for the info about the glass cookware. One of my favorites is a glass Pyrex I purchased from a thrift shop and use it all the time. I just read your linked post about the dish breaking in the oven, THAT had to be a mess to clean up and ruined dinner to boot!

DeleteYour brownies look delicious and make me hungry. I hardly bake at all any more (but when I do I use metal pans because of your story!) I wonder though if using butter instead of "shortening" would make a difference. I haven't bought "Crisco" for years and years -- even before I stopped baking regularly I really wasn't using it, but I can't remember if I directly substituted another fat or what ???

DeleteI do love brownies! Did you ever hear of the Mystery Chef? He was a radio chef back before television and we use his recipe, which is identical to yours! He does specify 1/2 teaspoon vanilla and my mother specifies an 8 x 8 pan. The tops of yours look a bit more cakey than the way mine look, but that could just be the light.

ReplyDeleteYou have two favorites of mine, brownies and charming old cookbooks! Sometimes there are only a couple of recipes I use in my oldest ones but I can't get rid of them. And the smell of brownies coming out of the oven makes me feel as if I was ready for anyone to drop in and share. The odd thing is though that my family always loves the recipe I use that calls for a brownie mix topped with large Symphony bars better than from scratch ones. They are satisfyingly chocolaty.
ReplyDeleteWe had a "Brownie Bake-Off" at work recently and because the organizer is gluten free I bought a special mix and submitted two entries: cream cheese brownies made from scratch and the mix brownies. I was stunned when the mix won! That seemed all wrong but maybe it was because that flavor is more what people are used to? Either way, we all felt slightly fragile all afternoon after all the taste testing but it was a nice event. They want to do chili next but there is no real kitchen at work, just a refrigerator and a sink.
