Today's picture(s) - St. Patrick's Day

Doesn't everyone spend St. Patrick's Day in a Mexican restaurant? Had a great time with Michael and Estée. The baby is due in less than four weeks!


My favorite dish, the one I get every time, Taquitos del Rancho: four fried corn tortilla taquitos filled with potatoes (potatoes cooked with onions and tomatoes). Served with Spanish rice, lettuce, tomatoes, sour cream and guacamole.

    1. I love your words 'expectantly radiant' - perfect. and yes the meal is great. not all Mexican places offer potatoes in their dishes!

    2. My sister-in-law, who is half Mexican and half Filipino, uses potatoes (as well as chicken) in her enchiladas. It's a great way to stretch a meal and quite yummy, too.

  3. St. Patrick's Day isn't generally observed here in Germany, but I know that it's a roaring party at the Irish pub where I am a regular, never been there for the occasion, though.
    I love guacamole and often make it just for myself when I intend to spend a cosy quiet evening at home.

    1. It isn't that big a celebration in Ireland either, but it's a huge day in the US. I think mostly because it is an excuse to drink a lot!

  5. That baby will be here before you know it!! And what a beautiful couple. I'll be they're having a great time with their little niece!

    Guess what? 99% of the time, I order Taquitos, although I get mine with chicken (and rice, beans and guac!). Sometimes, I'll get the Flautas, which are the same only made with flour tortillas instead of corn.

      Not daughter-in-law yet. They decided to put it off and focus on the little one.

  7. I have some Irish heritage and no Mexican, but I'd definitely rather eat Mexican food than corned beef and cabbage!) Your choice sounds wonderful. Mom and Dad to be look healthy happy and excited. Best of luck to all.
