Strawberry Fool


This recipe comes from sprite writes.


Strawberry Fool

1 1/2 c strawberries - I doubled this to make 3 cups strawberries
2-3 Tablespoons sugar
2/3 cups heavy cream
2/3 cups plain yogurt

Cut the tops off strawberries, and slice them.
Put in bowl and gently stir in sugar.

Whip the cream. I added a little honey.

Add yogurt to the berries. Mash the berries. (I use a fork.) Your goal isn’t to end up with a smooth consistency, just to make them less solid.

Fold in the cream.

Add more sugar if necessary. (If you have quality, in-season strawberries, you probably won’t need more.) - I didn't need to, even with doubling the strawberries.

Oh my, is this ever good! A perfect, perfect dessert. 

I went back to check on the post I did about fruit dessert names, and there was no fool. So I looked it up and found this:
a cold dessert made of puréed fruit mixed or served with cream or custard
So, I guess you could purée the strawberries if you wanted, but honestly, it was wonderful with just gentle mashing. I expect to make this several times during strawberry season. It is so delicious.

  2. Can't wait to try this! It's sounds similar to something we have here in England. We add crushed meringue and call it Eton Mess.

    1. I'll have to look up 'crushed meringue' - I can't imagine. :<)

      Crushed meringue is just plain meringue made in the usual way and broken up into lots of small pieces, usually by placing it in a paper bag or between two pieces of kitchen paper and breaking/crushing it with your rolling pin or something similar.

  4. Well, I think it would be a perfect dessert even without any mashing, and depending on one's taste and the sweetness of the strawberries themselves, no sugar at all would be necessary.
    Tomorrow, I'll have lunch at my parents', and who knows - my Mum may have some strawberries for me for dessert :-)

  5. Oh my gosh Nan! Strawberry season is over here in Florida, but I will definitely use this next season. And if we're very lucky there will still be some left in Oregon when we get back at the end of the month. Thanks.

    but have not added the whipped cream

    Will try
    have 14 cartons of strawberries in freezer
    and always Greek yogurt on hand...

    1. The taste of the plain yogurt and whipped cream together is quite wonderful. Funny, but I don't like Greek yogurt. Too tart or something for me.

  7. Thanks for reminding me of this wonderful dessert. I used to make this all the time. I remember reading about fool in Mapp and Lucia and asking my mom to make it. I have been hooked ever since. Now I must get some strawberries at the green market and make it again.
