Strawberry Banana Pancakes

I saw this recipe here, and made the pancakes a few hours later.

Strawberry Banana Pancakes

1 cup flour
1 Tablespoon sugar
1/2 teaspoon baking soda
1/4 teaspoon salt

2 eggs
1 cup Greek no-fat plain yogurt - I used our homemade plain yogurt
1/2 teaspoon vanilla extract
1 banana, mashed - I used a fork

2 Tablespoons coconut oil, melted (you can use butter) - I did use butter
1 cup diced strawberries

Combine flour, sugar, baking soda, and salt.
In a separate bowl, whisk together eggs, yogurt, vanilla, and mashed banana.
Add yogurt mixture to flour mixture and stir to combine. 
Stir in melted butter or oil. 
Fold in strawberries.

Spray griddle with cooking spray, and heat to 350º F.
Spoon batter onto griddle, and let cook until bubbles form on the surface of the cakes, about 2 minutes. 
Flip and cook until golden brown on the other side, about another 2 minutes.

I made these last night, and again tonight, topped with butter and maple syrup. Because Tom didn't want them two nights in a row, I've got some batter in the refrigerator to make some more tomorrow. I guess that tells you how much I love these pancakes. Delish!

  1. YumyumyumyumYUM!!! This sounds ideal for using a banana that has gone a bit soft but is still too good to throw out. And of course, instead of strawberries, any other type of berry would be nice in it, I imagine.

    1. My banana wasn't even that soft and it still worked great. And I'm sure you're right about the berries.
