I can't believe it's been four weeks since I've done a Weekend Cooking posting! I've made these cookies twice in that time, and to quote Margaret's text:
Best cookies in the world!! Love love love them!I am quite sure you will agree. The crunchiness is a delightful surprise when you first bite into a cookie. These are a bit different from the Cornflake Cookies I posted a while ago, and I think they are even better.
Crunchy Chocolate Chip Cornflake Cookies
1 cup soft butter
1 cup sugar
1 1/2 cups flour
1/2 teaspoon baking soda
pinch of salt
2 cups crushed cornflakes (I used a potato masher)
maybe 1/2 cup chocolate chips, or more if you want
Beat together the first four ingredients.
Mix together and add the three dry ingredients.
Stir in the cornflakes and chocolate chips.
Drop onto ungreased cookie sheet.
Bake in preheated 350º F. oven for about 10 minutes
1 egg
1 teaspoon vanilla1 1/2 cups flour
1/2 teaspoon baking soda

You will probably use good old Kellogg's Corn Flakes,
but I chose Erewhon's Corn Flakes.

ReplyDeleteGluten free cornflakes! Why can't Kellogg's cornflakes be gluten free? They now have gluten free Rice Krispies, but they cost a lot more.

Why do you like these cornflakes? Do they just taste better?
I have never used cornflakes in a cookie recipe -- at least not that I remember. These sound really good. And the "love, love, love them" is a pretty good endorsement. LOL.
