Peel and pit two ripe avocados.
Put the pulp into a food processor with the juice of half a lemon.
Process until smooth.
Place in a bowl.
Chop as many grape tomatoes as desired and put on top of avocado.
Chop fresh chives and add.
Salt as desired.
This couldn't be any easier and is simply delicious!

ReplyDeleteHip Chick, have you seen the movie, Tortilla Soup? I mention it because I just saw it for the first time, and the food, including avocados, is amazing. I've just bought it because I know I want to see it over and over. Great family story, and that food!!

ReplyDeleteSo this is pretty much how I make guacamole. Well, I mash the avacados by hand, but I cut up tomatos, put in a little lemon juice, some garlic salt, no chives or onions but you could, mix it all up. Guacamole. To be scooped up with tortilla chips or spooned on to taco salad or soft tacos or fajitas.

ReplyDeleteKay, I used to mash them by hand but one day I tried the food processor and never looked back. It comes out so, so smooth with none of the stringy texture I don't like. To make guacamole, I would add some salsa and spices. I haven't made it for a long time. This salad is quite a lot blander than the guacamole I've had in restaurants. I'll bet you have great places to eat it down there!

ReplyDeleteHave you seen the picture of the avocado I just posted on my blog? It's one of my favorite things to eat. I love it in salads, on sandwiches, on a bagel, or in guacamole. I'm just the opposite of you, though. I prefer my guacamole just barely mashed. The chunkier the better! :)
