Brownies and Cole Slaw

These brownies are the April installment of Margaret's boyfriend's birthday present. They are really rich and delicious!

Brownies

Grease 9 x 13 pan with cooking spray.
Preheat oven to 350ยบ F.

3/4 cup sifted cocoa
1/2 teaspoon baking soda
2/3 cup melted butter, divided
1/2 cup boiling water

In mixer:
Combine cocoa and soda.
Add 1/3 cup melted butter and boiling water.
Stir on low until it thickens.

Add:
2 cups sugar
2 eggs
1 teaspoon vanilla
the other 1/3 cup melted butter
Mix until smooth.

Add:
1 1/2 cups flour
1/4 teaspoon salt
1 cup chopped nuts, if desired

Mix well and pour into pan.
Bake 30-35 minutes or until brownies pull away from sides.
Watch carefully after 30 minutes so they don't over bake.
Cool before cutting.


Cole Slaw

Together with hummus and potato loaf, this is a dish we've been eating since we first became vegetarians. It is very different from regular cole slaw which I've found is often incredibly mayonnaise-y. I absolutely love this, and it is a powerhouse of healthy foods.

4 cups cabbage, put through the food processor
1 cup carrot, put through the food processor

Mix together:
1/2 cup plain yogurt
1/4 cup lemon juice
1/4 cup honey, warmed so a bit liquid
salt to taste

Add this to the vegetables.

  7. OOh those sound so good. Very summery. I don't like my coleslaw that finely chopped but the sauce sounds heavenly. And brownies...well...there are no words to describe how much I love brownies.
    BTW I do not live on the beach but I do live on the seacoast. It is only a short 15 minute drive to the beach.

  9. Nan! I feel like I hit the recipe jackpot today. Your cole slaw recipe sounds wonderful...you're right, most recipes, including my own which I made just yesterday, often turn out so "mayonaisy". This one looks really yummy. AND I followed your links for the hummus and potato loaf and can't wait to try them both! I have a pretty decent hummus recipe, but this looks even better. So.....thanks!   11. I usually just grate my cabbage and carrots - half yogurt and mayo.
    Will try adding the honey.
    All your recipes = I like!! Will have to try the brownies - also.

  13. Yum and yum. I've got to try those brownies. We love cole slaw and lucky us, the deli at the corner makes it just like my grandma and it's about $2 so I never make it!

  14. Tara, they are pretty great, but then again I've not ever made a bad brownie recipe. That's a wonderful story about the deli. Isn't it so wonderful to find a childhood taste? I'm still looking for the crullers at my small town bakery when I was a kid. Not even in Paris were they as good.

  15. Your brownies look good but I must say that your chocolate chip bars are my favorite. They are so quick to make. Ghiradelli chocolate chips were on sale this week and the first thing I thought of was those bars. They are coming up this weekend for the read-a-thon.

    I like your take on coleslaw. I'll have to give it a try also.
