Mexican Wedding Cake


This recipe was given to me a long time ago, and I have no idea why it is called Mexican Wedding Cake. It is absolutely delicious and very easy to make. Everyone I know loves this cake.

Mexican Wedding Cake

Mix by hand or in a mixer:

2 cups flour
2 cups sugar
2 teaspoons baking soda
1 cup chopped nuts
2 eggs, slightly beaten
1 20-ounce can of crushed pineapple

Put in a greased 9x13 pan, and bake at 350ยบ F. for about 35 minutes.

Frosting:

8-ounce package of cream cheese, softened
1/4 cup butter, softened
1 teaspoon vanilla
2 cups confectioners' sugar
juice of one lemon

A plain buttercream frosting with a little lemon juice is also great. Same as above only instead of cream cheese, add a little milk.

  3. This looks like one of those cakes the DH can't resist. It's the cream cheese icing. I'm gonna give this one a go! Oh, regarding your Pres. Obama post, we were glued to the telly over here, couldn't help but think I was witnessing history being made. Oh, I was digging Aretha Franklin's hat too.

  7. I have also been scrolling thru your blog and copying recipes. When you list MILK, would SKIM MILK be okay? Or am I supposed to use WHOLE MILK?

  9. Gigi, thanks so much for leaving a note. I use whole milk, but I assume any milk would be good. We get our milk from a local dairy farmer, and not only is it whole, it is raw, and the best tasting milk imaginable!

  16. Nan, I made this cake yesterday for my son's birthday. He loves pineapple so when I saw it here I wanted to make it for him. We all described the cake as yummy and the frosting is the best cream cheese frosting I've ever had! Thanks for a great recipe.

  19. Laurie, of course it's fine, but I think just maybe she makes something else with the same name. Over the years I've read of Mexican Wedding Cakes, and they were not this. Type 'mexican wedding cake' into google, and you'll see what I mean! Lots of recipes out there. Thanks for stopping by. I've just been over to your blog, and I'll be back to spend more time.
