Blueberry Fool

Blueberry Fool

I've had this recipe on a little post-it note in my recipe box for ages. I have no idea where it came from, but it is absolutely delicious, and incredibly easy and quick to make.

Melt 1 Tablespoon of butter in a saucepan.
Add 2 cups blueberries and 1/3 cup sugar.
Mix together, and take off heat.
Add 1 1/2 cups whipped cream and put in the fridge.

Honestly, that's it! I love this and will make it every summer during blueberry season from now on!

I think I'll add this to Weekend Cooking on Saturday, since it has been ages since I've posted a recipe!

  1. This is my kind of recipe! It looks good and you have it in the perfect bowl. Sometimes the most simple recipe, story, dress, whatever, is the best.

    1. I agree with you! I'm a pretty simple cook/baker. I don't make terribly complicated things. Of course I began cooking in the hippie days when it was all about simple and good, and I've continued on all these years later. The bowl came from my daughter-in-law as a Christmas present. It was just the right bowl. It pleases me that you noticed!

  2. Yummm!!! With food (and many other things in life), simple is often best, isn't it.
Oh, I have just realised that littlemancat has written pretty much the same. But there you go - we all recognise that fact.

  4. Also, I did read those Chautauqua books, at least the first ones. Thanks for mentioning them.

    1. I thought you had - that we had talked about them. I read Henry, Himself this summer, and thought it the best of all. Really, really wonderful.

  5. This looks and sounds so good. I don't think I've had fool since before my mom died in 1998. We used to have it often in summer for dessert. I just love it but sadly I am sugar free these days.

  6. I didn't know that's what Blueberry Fool was! My favorite blueberry dessert is a simple one where I whip cream, slightly sweetened, and then just fold blueberries into it. Of course my grandmother's coconut cookies taste mighty good with it also.

  8. Your method of cooking the blueberries only slightly and using all of them looks much better than more standard recipes which use a puree of berries blended completey into the whipped cream. How delicious!

  9. This is what happens when I get behind on visiting... I find a perfect blueberry recipe just after the season has ended. Ah well, that is why recipe boxes exist and this is going there immediately! Thank you (my kind of cooking these days).
