Potato Pancakes - Three

Today's recipe comes from our friend Susy, whose gardens I have written about here and here.

Potato Pancakes - Three

Beat one egg.
Grate 2 lbs. peeled potatoes (2 large russets) and stir into egg.
Grate a small onion and add.
Mix together:
1/4 cup flour
1 teaspoon baking powder
3/4 teaspoon salt
and add to egg mixture.

Susy just wrote to 'fry like pancakes.' I cooked them on the griddle greased with cooking spray as I did the previous recipes.

This recipe uses more flour than either of the other recipes, and only one egg when they both called for two. There is also more onion, which Tom and I both appreciate.

The pancakes held together much better than last night, with no spreading out of the batter.


This recipe made a thicker pancake.


I think PP-3 is my favorite recipe so far, while Tom prefers PP-1. He says there was a 'crispness' to them which he liked. I like this one because more flour made them a heartier meal.

Each recipe so far has made six pancakes.

  1. I forgot to say in the previous two potato pancake post comments that I love your header photo and the fact that it is taken from the inside looking out. I just read that we have had no measurable rainfall (unless you count a single dusting of snow months ago) since last September. That is way too much time to be without, and I am longing for the sound and feel and smell of rain.

    Funny, isn't it? Everywhere else has had too MUCH rain and snow...

  2. Thanks so much, Clair. I loved that view of the rain. But today the sun came out so I changed it. :<) I am always amazed to read of rainfall amounts in other places. I'm having potato pancakes for supper tomorrow night, too. ha ha!

  3. Karin, I wonder if I'll come across any without eggs. If not, I'm going to ask you for yours! I love thin and crispy, and thick and not crispy. I love them any way.

  4. All this potato pancake talk got me going this evening. I made some. I also added grated green pepper. I like the taste. They turned out good. I will make them again no doubt. Thanks for the inspiration to cook something a little different. This reminds me of a recipe that I made years ago and it called for swiss cheese added. That sounds good too.

  5. Lisa, very interesting to add pepper! And I've read about one with cheese, but since I don't eat cheese, I won't be trying it. :<) I'm tickled that you decided to make some potato pancakes. There are still more coming. People will be yawning before long. :<)

  6. Recipe #3 is closest to the ones my dad made I think. Fried in Crisco oil...yum LOL (my arteries are closing already)

  8. My grandmother made The Best potato pancakes and her recipe was very similar to your first one. However, she always put the grated potato into a dishtowel (not terrycloth) and squeezed out the liquid before continuing. And she always fried them in butter, or oil and butter mixed.

    I am really enjoying this "marathon".

  10. Diane, honestly the cooking spray works great. The flavor of the pancakes is just wonderful.

    Kristi, Friday's recipe (Martha Stewart's!) is a bit like this in that it 'squeezes' out the water - no towel though. I've been meaning to ask you - have you seen the March/April Victoria Magazine? There's an article on 'Ohio's Great Western Reserve!'

  11. I'm loving your potato pancake experimentation. As much as I love potatoes, I should be trying this too. I remember my grandmother's potato pancakes, also served with applesauce and sour cream, as being thick like regular pancakes. So, as much as I fondly remember Gladys Tabor, I'm going to try #3 first.

    Tuesday's dinner consisted of PP recipe number one and it was terrific. I've tried making them before with various recipes and was disappointed each time. Not this time! They were great! I topped 2 of them with a sunny side up egg that I received from a co-worker who keeps chickens. This on'e a keeper. Thanks!
