Margaret's Spinach Artichoke Dip

Tom and Margaret share a great love of artichoke hearts and cheese so she quite often makes this dish for them to share. Though this is called a 'dip' it really could be considered a casserole. Tom says he can't eat too much of it because it is so rich, but I've noticed he does.


Margaret's Spinach Artichoke Dip


Put the contents of three cans of artichoke hearts through the food processor.

Cook two 10-ounce packages of frozen spinach. Drain and pat dry with paper towels.

Combine with artichoke hearts.

Add 1/2 cup mayonnaise.

Add 1 1/2 cups parmesan cheese and stir well.


Place in a greased 9 x 13 pan.

Top with grated cheddar, parmesan, or shredded mozzarella cheese.

Bake in preheated 350ºF. oven for at least 25 minutes.

You may then put it under the broiler for a bit to brown up the top.


She made some this week, but it is all gone, and I'm sorry to say I don't have any pictures.

  1. This is one of my favorite appetizers to order at restaurants that serve it. I've never tried to make it myself, but now I don't have an excuse. It sounds very easy to make too. Tell Margaret thanks from me.

  6. I have never made it myself either...although I actually have a container of it in the frig I have been enjoying for a couple of days.
    I must make my own, maybe net time I have someone over for dinner.

  11. Sounds lovely! I am quite neutral when it comes to artichokes, but I am a big fan of cheese and spinach, so I am sure I'd volunteer to help Tom not eating too much of it ;-)

  14. Am I remembering correctly that you don't eat much cheese? I notice you didn't say how YOU liked this.

    This looks like a nice recipe and I think it is wonderful for people to have a special recipe that they are known for. My eleven year old son is already the "lasagna guy" in his crowd. :)
