Potato Chip Cookies (and a bonus punch recipe)


Potato Chip Cookies


1/2 cup butter, softened
1 cup sugar
1 egg
1/2 teaspoon vanilla
1 cup flour
1/2 teaspoon baking soda
1/2 cup chopped walnuts
1/2 cup crushed potato chips

Put 1/3 cup of granulated sugar in a separate bowl.


Preheat oven to 350 degrees F.
Cream the butter with the sugar.
Add the egg and beat well.
Add vanilla.
Add the flour and baking soda and mix well.
Stir in the crushed potato chips and chopped nuts.
Shape cookies into balls and roll in sugar.
Place cookies on an ungreased cookie sheet and flatten slightly with the bottom of a glass.
Bake for 10 minutes.
Cool on sheet before removing to cooling rack.
Makes about from 30-36 depending on size.

Excellent! Sweet, crunchy, and delicious. This is one of my favorite cookies.

Yesterday we had a big family Christmas party down at Margaret and Matthew's, and my contribution was this very simple and terrific punch. Sorry I didn't get a photo.

In a good sized punchbowl, mix:

2 quarts orange juice
2 quarts ginger ale
1/2 bottle of tequila (the 750 ml size) - I use Jose Cuervo Tradicional
Top with a package of frozen strawberries

Needless to say, this was a big hit.

Both the punch and the cookies sound delicious...I am a bit of a potato chip junkie, you know, well, actually more than a bit if the truth be told....as I was reading the recipe, I realized I have everything in the house to make these cookies, and baking day is on Wednesday (sadly my first and last baking day this holiday season) so I will be giving them a whirl.

  4. Both sound delicious. Would potato chips be what we call crisps here in the u.k, do you know?
    We can match you snowflake for snowflake here at the moment, we aren't so well prepared though!

  6. Me, too Niki. Here's the solution. Buy a really good deep fat fryer and make your own french fries and then you won't have to buy potato chips. :<) I haven't been able to stop eating these cookies.
    I hope to read AICC next year. Sorry you aren't liking it as well. I'll let you know.

    Ernestine, you could cut the amounts. Or you could just make a margarita, my recipe for which is under the recipes tab under the blog header pictures, then cocktails.

    Yes, Carole our chips = your crisps. You will love these cookies. I think you have more snow than we do now. Ah, a Christmas right out of a story book.

    Life on the cut off, there really isn't any other cookie like it, is there? Amazingly great taste.

  7. so just to follow up, the ending to AICC was better than I hoped and made me like the book as a whole a little more...which is a good thing as I now OWN our library copy ($31!) 'cause I dropped it in the tub!!! I would love to own any of the others....and now I own my least favourite..oh well...thats the way the Potato chip cookie crumbles...lol,.....baking day tomorrow!

  9. Very, very funny, Niki! I actually went out and bought the whole series. You may remember I was given the fourth from the publisher, and had read the others from the library. I decided this is a series I would like to read all over again, so I now have the first three in paperback, the one I was given in hardcover, and the new one which is also hc.

    Les, I ate almost all those cookies myself! They were so good. Thank you and the same to you.
