Cornflake Cookies

Cornflake Cookies

Beat together well:

1 cup soft butter
1 cup sugar
1 egg
1 teaspoon vanilla

In a separate bowl, mix:

1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar

Gradually add dry ingredients to butter mix.

Stir in 1 1/2 cups cornflakes.

Add 1/2 cup nuts, if desired (I didn't).

Drop onto greased cookie sheet about two inches apart (cookies will spread).

Bake in preheated 350ยบ F. oven for 12-15 minutes.
Makes around 30 cookies, depending on size.

This is a first-time recipe for me, and I loved the cookies. They are quite chewy so if you don't like that quality, you could probably crush the cornflakes before adding them to the batter.

  4. How unusual! It reminds me how I always used to do a cornflake cover on oven-baked chicken and have the kids help crush up the flakes...haven't done that in a long time - it used to taste quite good :)

  7. This is a strange cookie? I have always sort of joked that corn flakes has got to be the most boring cereal out there. I can't imagine making a cookie out of it.

    Hip Chick, boring? cornflakes? never! I love cornflakes, though I don't eat kellogg's anymore. I eat this health food honey stuff, that I still love. :<)

  9. Thanks for visitng my blog..re aprons..They are hanging on a wall in my kitchen,,yes most of these aprons were made/worn in the 50's..my Mom only wore half-aprons..she is a tidy cook..MIL made me one that literaly wraps all around me..though I prefer to wipe my hands on my pants lol..

  13. Bettyann, I can't imagine how even the 'tidiest' cook could avoid tomato sauce splatters. I wish I could recall what kind of apron my mother wore. I'll bet it was the half one though.
