Apple Crisp


This is the very first apple crisp I ever made, from one of my very first, and much loved, cookbooks: The Tassajara Bread Book. There's another recipe from this cookbook here. Sooty made a good book stand as I snapped the picture.







Apple Crisp

Peel (if desired), core, and slice apples enough to fill the bottom of a 9x13 greased pan.
Sprinkle with the juice of one lemon.
Sprinkle with cinnamon and nutmeg.
Mix together 1 cup flour and 3/4 cup sugar (calls for brown, but I just use sugar in the raw).
Cut in 1/2 cup soft butter.
Sprinkle this mixture on apples.

Bake in preheated 375º F. oven for about 45 minutes.
You may serve plain or with whipped cream or ice cream.
Such a simple little dish, but so very delicious and just the ticket for the first full day of autumn.

  3. Apple crisp is an all-time favorite! Everybody should make one right now! Love your bookstand idea--never heard of doing that before (and not all cats would sit still for it).

  4. JoAnn, I love these kinds of desserts much more than pie. I used to think I should learn how to make pie crust but then I realized that I don't really like pie - just what is inside. :<)

    Lisa, nothing ever fazes this cat! He is really amazing. 16 this month!

    Mary Lois, no they wouldn't, and as I said to Lisa, he is amazing. Maybe that's the secret to his active old age - he is unflappable in all situations.

  5. Perfect! I have apples in the fridge and was thinking of what to do with them that would make the kitchen smell like autumn on this chilly day.

    By the way, that cookbook is something else we have in common--although mine looks a lot more beat than yours...

  6. In the UK they'd call that a "crumble" so Apple crumble
    I must admit it sounds yummy and it's making me hungry.
    We've been making your brownies and also Banana bread an old recipe from the farmer's weekly magazine cookbook...I have to pass this comment on I wrote it down on the back of the brownie recipe card straight away so I wouldn't forget it..in the context of a discussion about trying new recipes..Oldest D (said with a very emphatic tone) "You can never get enough of SOME peoples' recipes, Nan's are excellent!"

  7. Clair, my son and his fiancée were up and most of that crisp is gone. ;<) I just bought more apples today. It probably depends what page of the T. cookbook you look at. :<)

    Val, I'm going to do a blog entry soon on all the different names for apple desserts, and maybe even bake my way through them! Your daughters are my biggest fans! Wish we lived much closer.

  21. Sometimes I think I should just do a food blog! I love all your comments. Sooty is indeed a rare cat. As far as the kind of apples, I'm not even sure. I just picked up a bag in the co-op from a local apple farm. The ones I bought yesterday said Macs so maybe the first ones were too. I don't think it matters a bit what kind of apples. I've never paid attention. They all taste good. :<) Janice, I'll check it out, thanks! Susan, your blog looks fine on my computer!

  28. Yummy! Thanks for sharing this easy to do recipe. I just tried it last weekend and my kids loved it while watching our favorite TV program. I served it with double dutch, their favorite ice cream, and it's a blockbuster.
