This recipe comes from an old newspaper clipping. I wrote on it: "wonderful! first made 12/12/01." Now, almost seven years later, my original impression holds. These are simply fantastic. Perfect for when you want something really chocolatey. I used the Ghiradelli 60% cacao bittersweet chocolate chips.
Double Chocolate Mud Bars
1/2 cup soft butter
3/4 cup sugar
1 teaspoon vanilla
1 egg
1 cup plus 2 Tablespoons flour
1/2 teaspoon baking soda
12 ounce package chocolate chips
1/2 cup chopped walnuts
Preheat oven to 350ยบ F.
Spray 7 x 11 pan with cooking spray.
In the mixer, beat together butter and sugar.
Add egg and vanilla.
Combine flour and baking soda, and slowly add it to butter mixture.
Add 1 1/3 cups chocolate chips and the walnuts.
Put mixture in pan and bake about 25 minutes.
Take pan out of the oven and immediately sprinkle the rest of the chocolate chips on top.
When they start to melt, spread evenly.
Cool to set chocolate and cut into squares.
l shall have to stop visiting the Hill Farm or take lessons in resisting temptation. Your recipes are so delicious and my waistline is severely at risk.

For the most part I am a little bird that gets to stay home...sometimes I do have to leave the nest (durn it) to do shopping and substitute teaching!

ReplyDeleteJust reading Jill's comment there made me go and look up Gladys Taber again (having done so ages ago when I first discovered your lovely blog, Nan). This time I discover she kept Manx cats, and as I come from the Isle of Man that is good news to me. She was clearly a lady of taste!
