Another departure from the pancake/waffle kind of supper because I bought some beautiful rainbow carrots at the Farmer's Market, and I just had to eat them tonight. I also got some pretty yellow peppers and I'll sauté them with our onions and garlic and serve it over pasta.
That sounds like the perfect kind of dinner. You just reminded me that I have carrots growing and I keep forgetting about them. They are still tender and thin, but very yummy. I guess carrots are one vegetable that it is alright to forget about in the garden. :)

It was a great supper! The rainbow carrots had a bit of a parsnip taste. Very good. I'm someone who prefers cooked carrots to raw.
