Strawberry Cobbler



This isn't a 'real' cobbler because the fruit isn't mixed into the batter. I chose to use this recipe as a shortcake. I heated up some strawberries with sugar, and poured them over the top of the split cobbler.

Strawberry Cobbler

2 cups flour
1 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt

1 egg
2/3 cup milk or buttermilk
1 teaspoon vanilla
3 Tablespoons melted butter, cooled

Lots of strawberries

Preheat oven to 350º F.
Combine dry ingredients.
In a separate bowl, beat an egg, and stir in buttermilk, vanilla, and cooled butter.
Mix all ingredients and put into greased 7x11 pan. (8x8 would probably work, too)

Bake 35-40 minutes until top is firm.

This is a really wonderful June dessert. Heavenly, especially topped with whipped cream.

  4. Alas, here in Nashville our strawberries have gone by and our blackberries have shriveled up for lack of rain. Down here we have to ask the peach to do everything!

  5. Are those fresh strawberries? We don't see fresh local strawberries until early to mid July. There is nothing like local strawberries! mmm

  8. I just made some peach cobbler with peaches I canned last summer - yum, now I think I will have to try strawberry cobbler. Cobbler is one of my favorite desserts, so I am really good to go on this recipe.

    1. I'm reading Dead and Berried by Karen McInerney and just last night I read a recipe for a peach dish. As I wrote to Betsy, it is a foreign fruit to me. I remember having those canned slices as a kid, but hardly ever tasting a real peach.

    1. I love them too. While others love chocolate anything, it is fruit desserts that I can't resist.

      I was lucky with the blog header pic. That mock orange has been full of butterflies. They don't calmly eat as I see them on lilacs, but have been almost wild with movement. The mock orange has the sweetest smell ever, and maybe they love it.

  15. Just stopped at the farm market yesterday and brought home a big basket of berries....I've been sitting here smelling them trying to decide if I want to make jam. This looks so much easier and just as delicious. Thanks for the inspiration.
