Carrot and Pineapple Cake

This is my favorite, favorite carrot cake. I had two pieces to be sure it was good enough to share the recipe. :<)

Carrot and Pineapple Cake

Beat together:
1/2 cup melted butter
1 cup sugar
2 eggs

Beat in:
1 cup flour
1 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt

Add 1 cup grated carrots and 1/4 cup chopped walnuts. I grate and chop in the food processor.
Add 8 ounce can of crushed pineapple.

Bake in 9 x 13-inch pan greased with cooking spray in preheated 350º F. oven for about 40 minutes.
Cool and frost.

Frosting:
3 Tablespoons soft cream cheese
3 Tablespoons soft butter
1/2 teaspoon vanilla
enough confectioners' sugar to frost the cake. I just kept adding it by 1/4 cup measures. I sifted it into the bowl so it would be smooth. Add water or milk if needed.

You could bake this in a smaller pan for a higher cake, but I've found the 9x 13 to be fine.

  1. How on earth do you keep so slim when making and being tempted by such scrumptious recipes?
Just seeing your photos makes the mouth water!

  3. My carrot cake recipe uses stewed apple but I can't find the piece of paper it's written on. This looks a great alternative.

  8. Hmm. Although what happens if I don't have a food processor? Can I use a blender or just do it by hand?

  9. Thanks for the link to your recipe. This looks delicious!

There is probably no way I can get crushed pineapple over here, but I could try to crush them myself?

  10. leeswammes, could you do this?

There might be other ways to order too, but this is the first one I saw. I used crushed pineapple in other cakes too, and it is just great.

  11. I'm really surprised Amazon sell this. But with $7.50 in postage, I won't be buying it. I think some experimenting with pineapples and a blender may be more within my budget. :-)

But thanks for finding it. I'd never even heard of crushed pine apples. Isn't it funny how each country uses different ingredients for their foods?

  12. Leeswammes, I thought it would be too pricey but wanted to send it along anyhow. It is interesting about ingredients. When we went to Britain years ago, the thing I really enjoyed was going into the food stores to see products I had never seen over here.

Dole is a big company and their products are in all American supermarkets. Their website:

    http://www.dole.com/

    and one for Europe:

    http://www.doleeurope.com/

    This has been fun!!

  13. We do have Dole, just not crushed pineapple. At least, it's not something I've ever seen mentioned in a recipe here in the Netherlands.

In many supermarkets we have a (small) shelf with polish foods or other foreign foods, and that is fun to have a look at too! :-)

  14. Leewammes, Polish foods! Oh, how wonderful. I'm sure there are areas in the US where such treats are available, but not here. I live in a small area, pretty far from any big city.
