The Joy of Baking - Cornmeal Muffins

Here's a recipe from Mrs. Appleyard, this one from Mrs. Appleyard's Kitchen.

Cornmeal Muffins

Mix together:
1 cup cornmeal
1 cup flour
1/4 cup sugar
1/2 teaspoon salt
4 teaspoons baking powder

Add:
2 well-beaten eggs
1 cup milk
2 Tablespoons melted butter

Bake in greased muffin tins at 400º F for 20-25 minutes until crusty on top and bottom and soft inside.

I first made these exactly three years ago, and they are my favorite corn muffins. Don't they look just delicious?!

  3. Nan, I made these muffins with our dinner this evening and they were a hit. They are nice and crispy on the outside and soft inside. We each had two with butter. I will make these again.
